An ordinary mangal puts the host's back to the guests and his face in the smoke. Ours is built the other way round: a 304 stainless hearth stands under its own restaurant-grade ventilation, the woodstore is built in beneath the countertop, and the skewers rest on a rail instead of balancing on an edge. The cook stays in the conversation.



A hood with an electric fan and calculated ductwork lifts the smoke out of the cooking zone, and 304 stainless grease filters lift out to be washed. The smoke goes up and away rather than sideways into the table.
Skewers sit on stops at a fixed spacing: ten line up evenly, none slide into the fire, none char at one end. You turn the whole line with a flick of the wrist.
The wood stays dry in a ventilated recess under the countertop, instead of in a sack by the fence. The recess is lined in the same thermo-karagach as the fronts.
Our own thermo-treated wood on the fronts and surrounds — where it never sits next to flame. A warm line across cold steel, and the same finish as the kitchen beside it.
