The reason is structural: the body of our kitchens is made of steel, not timber, and is engineered for high-temperature zones — for a mangal, a barbecue and open fire. For enclosed rooms we build the body in powder-coated steel, and the ventilation as a powered, restaurant-grade unit made for your project.
One caveat we always state: an enclosed installation is calculated for the site. Ventilation capacity, the gas supply and its safety, clearances to combustible construction — those are engineering, not "fit it and see". Which is why a project like this begins with an engineer's visit rather than a choice of color.
That's the ventilation's job, and we build it ourselves — restaurant-grade smoke ventilation, but with the looks and the ease of use nobody expects from restaurant equipment. An electric fan and a calculated duct system take smoke and odours out of the cooking zone; grease filters in 304 stainless catch the grease before it reaches the duct, and they lift out to be washed. The canopy is sized not for one burner but for the whole working line: you can grill, smoke and braise under it at the same time.
The canopy is made for your kitchen — whatever length the run needs. There is no limit on length: the ventilation is fabricated for the project rather than picked from a catalog. Depth is 650 or 800 mm. For an enclosed room the capacity is calculated against the volume and the layout — that's part of the engineering.
Serious: up to 400 °C, and a personal pizza in under 90 seconds. The temperature sensor is built into the baking stone itself, so you read the stone's readiness rather than the air above it. Dampers on both sides give control over heat and smoke — gas, wood, or both. Beyond pizza: bread, pastry, samsa, steaks with a proper crust. It holds two personal pizzas or one large one.

Our Almaty showroom has an outdoor kitchen that's three years old: not a display stand but a working kitchen, where you can see how the steel, the granite and the timber look in their third year. Beside it is a four-year-old terrace in birch and ash — walk it barefoot and see how thermowood behaves after four Kazakh winters. The samples of species and finishes are there to pick up, along with our coating colors, because a metal color should be chosen from a sample rather than a screen.
