Steel, stone or wood

You've chosen the kitchen. What's left is the surface you'll touch every day. Each of the three materials is objectively the best at something, and objectively worse at something else. Both halves are below.

The short answer

If you cook a lot — stainless steel. If the look of premium stone matters and you'll keep it sealed — granite. If you want the warmth and character of timber — thermo-slab. Most often the best answer is a combination: steel in the working zone by the fire, stone or wood on the bar and dining run. We cut to your drawing, so mixing is straightforward.

1 · 304 stainless steel

A work surface with no compromises

Where it is objectively best. Steel is non-porous: it absorbs nothing — not water, not oil, not citrus juice. It is the most hygienic of the three surfaces and the only one that never needs sealing. You can set a hot pan straight down on it. Of the three, only steel is indifferent to stains, damp and frost alike.

Ours is the same 304 steel and the same welders that build your kitchen's body. Real Turkish stainless — stronger than the cheap Chinese steel many fabricators use.

  • Honestly: fingerprints and water spots show. A brushed, directional grain hides them markedly better than a polished finish — and blends new scratches into the existing texture.
  • Honestly: it scratches. From knives and dragged pans. Over time the surface builds a patina of fine scratches — some people dislike that, others prefer it.
  • Honestly: polished steel gets very hot in the sun and is noticeably reflective. Out in the open we recommend brushed.
  • Honestly: even 304 can corrode if the surface is never cleaned — salt and food residue aren't forgiven forever.

2 · Natural granite

Stone that looks more expensive than the kitchen

Where it is objectively best. It is the hardest and most wear-resistant of the three, and it takes heat. Granite handles freeze–thaw cycles well — cracking is rare, which matters for an Almaty winter. And visually, stone sets the level for the whole kitchen in a way neither steel nor timber does.

  • Honestly: granite is porous and must be sealed. Outdoors, once or twice a year. The test is simple: put a few drops of water on it and wait fifteen minutes; if the stone darkens, it's time to reseal.
  • Honestly: dark granite gets hot in direct sun. Under a canopy or pergola that's a non-issue — on an open terrace, choose lighter.
  • Honestly: oil and citrus stain if not wiped up. Unsealed stone takes them in quickly.
  • Honestly: pale granite is more porous than dark and needs resealing more often. Prettier means slightly more upkeep.
3 · Live-edge thermo-slab

The only surface that's warm

Where it is objectively best. Wood is the only one of the three that's pleasant to touch in any weather: it doesn't bake in July or bite in January. Thermal modification buys dimensional stability through temperature swings — that's precisely what the process is for. The color runs through the whole board rather than sitting on top as a coating. No chemicals are involved, only heat and steam. And a live edge doesn't repeat: there is no second countertop like yours.

  • Honestly: it fades without care. Under UV, timber silvers and loses depth of color. Oil brings the color back — that's exactly why the care programs exist.
  • Honestly: it isn't a surface for hot things. No pans straight onto the wood; it needs a trivet. If you cook intensively, put wood beside the working zone rather than in it.
  • Honestly: thermally modified timber is more brittle than untreated — bending strength is lower. So thickness and fixings are calculated, not estimated.
  • Honestly: stainless fixings only. Thermal modification raises the timber's natural acidity, and ordinary hardware corrodes in it. We fit stainless — but it's a reason not to buy a slab cheaper somewhere else.
  • Honestly: surface micro-cracks happen. That's a property of living wood, not a defect: they don't affect the structure and aren't covered by the guarantee.

Steel in the grill and sink zone. Set hot things straight down and never think about sealing or stains.

The kitchen is architecture

Granite along the whole run — pale if the terrace is open. Seal it once a year and the stone looks like handover day.

Thermo-slab on the bar and dining run, steel in the working zone. Warmth exactly where elbows land.
